Pate a Choux is one of those versatile pastry doughs that is the base for everything from eclairs to profiteroles. Traditionally made with just flour, water, butter and egg, the amazingly light and fluffy end product is the result of steam leavening in a hot oven.

Not one to simply accept the 'traditional recipe' at face value, methinks this is just the foundation for something much crazier.

What, did someone say Ice Cream Sandwiches? Well, you've got my attention!
