The Cookie Fix
Time to Reinvent the Peanut Butter Cookie
You voted, and the winner (or rather, the loser) is Peanut Butter!
I have to say, I'm not at all surprised.
Dry and unadorned -- the Peanut Butter Cookie has always been in the "Why bother?" category for me. I'd rather be given a spoon and a jar of Skippy.
How can we fix these cookies?
- Flavor: What's in the recipe for a basic peanut butter cookie? Peanut butter, sugar and eggs (yep, most are flourless). Wow, guys... you really outdid yourselves there. Sometimes simple is good, but that list of ingredients is not going to produce a revelatory flavor profile. What about aged yeast dough... molasses... let's get a little creative here!
- Moisture: *Cough* Let's fix that whole dry-as-dust thing. I realize this is a personal preference issue, but I feel a good cookie should be moist, and these cookies will be very moist.
- Add-ins: Peanut Butter Cookies are screaming for some chips and chunks. Dark chocolate? Toffee? Fresh sweet cherries?
- Form: *Sigh* That fork-pressed shape... where did that come from? Who knows, but it ends here!
Coming this Friday!
