Mille Crepe Cake
The Mille Crepe is a towering French cake made from layer upon layer of paper thin crepes and delicate pastry cream. It's a creation requiring patience and precision, but the end product is just about as visually stunning as a dessert can get.
Unfortunately, when it is poorly executed, the Mille Crepe is little more than a stack of pancakes (do a quick Google search for some truly scary homemade attempts)!
Time to go vertical... layer by delicious layer.
"Mille" literally translates to "one thousand" in French. While the actual cake does not come close to having that many layers, the name does appropriately imply the intricacy in assembling the cake.
Lady M Boutique in New York has become famous for its 20-layer version, served up in several flavors including chocolate banana.
I figure, why stop there? Given the simplicity of a crepe, this cake lends itself to seemingly endless possibilities when it comes to composing and combining layered fillings and flavors. Why stop at 20 layers? Why not mix up the flavors of each layer? Why not throw in some textural surprises?
