Announcement: Tarts, Tarts, Tarts.... Potato, Mustard & Gruyere

Upcoming: Tarts - Potato, Mustard & Gruyere 

In celebration of 2,000 Instagram Followers, it was once again Reader's Choice for this week's ingredients.

The format had been decided... whatever was among the list of winning ingredients would find their way into some form of a tart (a nod to the recent focus in Culinary School).

A flaky, buttery tart shell is a rather open format... a blank canvass that lends itself to countless possibilities.

And the winner is...

Potato, Mustard and Gruyere (submitted by Caeli R.)

This is a pretty fantastic, savory mix that will work well with a variety of other ingredients: curry, dill, cumin, apple, celery root, fennel, yogurt...

We'll just have to see where things lead.

If one tart is good, why not four?

Rather than plan out one tart with these ingredients, I thought it would be more interesting to try several versions: two classic ring-mold tarts and two rustic, free form tarts or Galettes (or if you're Italian, Crostatas).
