And the Winner is...
Hopefully I didn't skew the vote by admitting this was one of my favorites...
Profile: Apricot / Pecan / Caramel
This original recipe was interesting for two reasons. First, I was experimenting with mixing methods, combining the Cut-In Butter method with a French Meringue. The result was a uniquely tender cookie / cake / biscuit hybrid.
The second unique feature of "The Tortoise" was the use of savory Lemon Thyme. The citric yet woodsy flavor of the herb was as strong a match with the apricots and caramel as it was a pleasant surprise.
More of an exercise in refinement rather than a wholesale redo, I will be working on revamping, revising and republishing this recipe over the next week!
